Sweet Potato Egg Muffin

It is better to use a spiralizer to cut sweet potato. Amazon has several good ones.

12 muffins


1 Small sweet potato ( cut in spiral shape)

2-4 Strips of bacon

2 tbsp. Almond butter

2 tbsp. Maple syrup

4 Whole eggs

2 Egg whites

2 tsp. Cinnamon

Pinch of salt

2 tbsp. Almonds, finely chopped ( optional)






Preheat oven to 350

Rub muffin tin generously with olive oil. The eggs stick easily so rub the whole cavity of the tin.

Divide sweet potatoes between the 12 muffin cavities. Using about 1/3 cup packed down in tin.

Divide and crumble bacon evenly into each cavity, so it is not on top.

In a large microwave safe bowl melt almond butter and maple syrup

Add eggs, egg whites, vanilla, salt and cinnamon to almond butter mixture

Pour and fill each muffin cavity

Add almonds on top if desired

Bake until muffins rise (a lot) and feel firm about 30 minutes

Cool to room temp and serve
