Mexican Squash and Beef Casserole

Yields

6 servings

 

Ingredients

 

1 lb. beef or Italian sausage

3 TBS oil( I use olive oil)

3 medium yellow squash

1 sm onion

1 garlic clove minced

1 (14.5 oz) caned diced tomatoes undrained

1 tsp chili powder

1 tsp cumin

1 tsp paprika

1 tsp salt & pepper

1 cup cheddar cheese ( or your favorite cheese topping)

 

Directions

 

Preheat oven to 400

In large skillet cook meat until brown. Drain and set aside.

Heat oil in skillet over medium heat. Mix in the squash, onion, and garlic. Sauté until tender.

Add meat and tomatoes to skillet.

Season with chili powder, cumin, paprika, salt & pepper.

Turn mixture into casserole dish. Top with cheese.

Bake for 15 minutes

Notes

You can use both meats in this dish or mix and match your favorites.

I used the beef and sausage and it was delish.
