Eggplant Lasagna

Cut eggplant as you are ready to use it.

Thaw spinach while meat is browning or the day of so it is ready for use.

Cooking Time







1 lb. Hamburger meat

1 Lg. Eggplant

1 Sm, pk of frozen spinach

1 Lg. Can Tomato sauce

1 Sm. can of Tomato sauce

Salt, Pepper, Garlic, Italian seasoning

Mozzarella Cheese




Brown Hamburger meat and add spices to taste

Peel eggplant and cut lengthwise into this strips (like long,wide noodles)

Add tomato sauce &  ricotta  to meat ( on ricotta, use as much as desired here. I used about 3 TBSP) You could also substitute and use cottage cheese.

Add in thawed spinach. I used only 1/2 of the bag. Use as much as desired.

Spray baking dish with Olive oil.

Start layering......eggplant, meat and sauce, mozzarella cheese til complete. ( I did 3 layers)

Bake at 375 until bubbling hot and eggplant is tender.


I made this dish the night before. Great way to get ahead on weekly meals.
